Fried Cabbage

SERVES 5 OR 6

I say “fried,” but it’s really just braised in its own juices. Bacon adds a smoky flavor. Olive oil and butter work well also, along with a little smoked paprika and salt and pepper for depth.

4 strips bacon, chopped

1 tablespoon butter

1 yellow onion, diced

1 large head green cabbage, chopped

2 teaspoons sugar

1 teaspoon salt

1 teaspoon pepper

1 teaspoon dried thyme

1 cup chicken stock

splash of apple cider vinegar (optional)

In a large pot or a Dutch oven, add the bacon and butter and cook until bacon is crisp. Add the onions and cook about 5 minutes until soft. Add the cabbage, sugar, salt, pepper, thyme, and stock. Cover and cook on low for 15 to 20 minutes until tender. Uncover and stir every 10 minutes of so. Add the vinegar, if desired. Cook an additional 5 minutes to blend flavors. Serve hot with cornbread!
